Vegan Caramel Chia Pudding

Ingredients

Chia pudding

  • 1/4 cup chia seeds, (I used white chia seeds)
  • 1 cup unsweetened almond milk
  • 1 tbsp maple syrup
  • 1 tsp pure vanilla extract

Vegan caramel

  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 2 tbsp almond butter (I used @noyanutbetter)
  • 1/2 tsp pure vanilla extract
  • pinch salt

Toppings

  • dried nana
  • non-dairy whipped topping, (I use coconut cream)

Preparation

  1. Combine chia seeds, almond milk, maple syrup, and vanilla extract in a bowl for the pudding and stir well.

  2. Let the mixture sit for at least 15 minutes or refrigerate to thicken.

  3. For the vegan caramel, melt coconut oil in a small saucepan over low heat.

  4. Add maple syrup, almond butter, vanilla extract, and a pinch of salt to the saucepan, stirring until smooth.

  5. Once the pudding is set, top with the vegan caramel and desired toppings.

  6. Serve immediately or chilled.

Notes

  1. Chia seeds are highly nutritious, rich in fiber, protein, Omega-3 fatty acids, and antioxidants.
