One-Pan Three-Bean Rice Meal
Ingredients
- 1 onion
- 1 pepper
- 3 garlic cloves
- 1 tin baked beans
- 1 tin kidney beans
- 1 tin black beans or substitute for another type
- 1 tsp chilli powder
- 1 tsp smoked paprika
- 1 tbsp mixed herbs
- 3 tbsp taco spice
- 1 veg stock cube
- 250g tomato passata
- 3/4 cup rice
- 2 cups water
- 1 handful vegan cheese
Preparation
Grab a large pan and add the onion and pepper. Fry over medium to high heat for 5-7 minutes.
Add the garlic to the pan and fry for another minute.
Add the baked beans, kidney beans, black beans, chilli powder, smoked paprika, mixed herbs and taco spice to the pan. Mix the ingredients together.
Add the tomato passata, rice, stock cube and water to the pan. Mix together, cover with a lid and simmer on medium to high heat for 20-25 minutes or until the rice has cooked. Stir regularly and particularly towards the end when the sauce thickens. Add a bit more water if the rice needs cooking for longer.
Mix in the cheese just before serving.
Notes
This dish is inspired by taco mixes and has a tomatoey, hearty flavor.
It is designed to minimize washing up and pairs perfectly with garlic bread.
