Blueberry Cashew Butter Hemp Seed Breakfast Bars

Ingredients

  • 1 cup + 2 tablespoons hemp seeds
  • 1/2 cup cashew butter
  • 1 cup unsweetened plant milk
  • 3/4 cup mashed banana or you can sub 2 eggs
  • 2 tablespoons maple syrup
  • 1/2 cup blueberries fresh or frozen
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • Pinch of salt

Toppings

  • 1/2 cup cashew butter
  • 1 cup blueberries fresh or frozen

Preparation

  1. Preheat the oven to 350° and line an 8x8 pan with parchment paper.

  2. In a large bowl, combine all of the hemp seed breakfast bar ingredients except the topping ingredients.

  3. Stir until the mixture becomes really fluffy and well combined.

  4. Pour the mixture into the pan.

  5. Using a spoon, drizzle the 1/2 cup cashew butter over the top of the breakfast bars.

  6. Using a knife, swirl the cashew butter into the hemp seed bake and then add blueberries on top.

  7. Bake for 30-35 minutes until the center of the breakfast bake is set completely.

  8. Cool completely, cut into 9 squares and drizzle with maple syrup.

Storage and reheating

  1. Store leftovers in the fridge covered for up to 5 days.

  2. To reheat, place in a toaster oven or microwave and then drizzle with maple syrup.
