Carrot Cake with Chocolate Frosting
Ingredients
Cake
- 4 eggs
- 3 chopped carrots
- 1 cup vegetable oil
- 2 cups sugar
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- margarine and all-purpose flour for greasing
Frosting
- 2 cans sweetened condensed milk
- 2 tablespoons unsalted margarine
- 1 cup cocoa powder
- 1/2 can (150g) heavy cream
Preparation
Cake
Blend the eggs, carrots, vegetable oil, and sugar in a blender at medium speed until smooth
Transfer the mixture to a bowl and stir in the flour and baking powder until just combined
Pour the batter into a greased and floured small cake pan
Bake in a preheated medium oven for 30 minutes or until a toothpick inserted in the center comes out clean
Frosting
Combine the sweetened condensed milk, unsalted margarine, and cocoa powder in a saucepan
Cook over medium heat, stirring constantly, until the mixture begins to pull away from the bottom of the pan
Remove from heat and stir in the heavy cream until smooth
Spread the frosting over the warm cake immediately after removing from the oven
Let the cake cool before serving
