Carrot Oat Breakfast Cake

Ingredients

  • 150g apple sauce
  • 40g nut butter of choice
  • 100 ml almond milk ( or other)
  • 70g sugar/coconut sugar/xylit etc
  • 100g oat flour
  • • 30g coconut flour ( or more oat flour)
  • 2 tsp baking powder
  • 1 pinch of salt
  • 130g grated carrots (1-2 small-medium carrots)
  • fresh lemon peel (from 1/2 organic lemon)
  • optional: vanilla flavedrops

Preparation

  1. Mix all ingredients well ( add carrots last)

  2. Bake in a square form for 30-60 min (180°C/350°F upper- and lower heat) until it's golden brown

  3. The baking time depends on your oven and your baking form

  4. For the frosting mix some vegan cream cheese (~100g) with 1-2 tbsp marple syrup or other syrup

  5. Let the cake cool down before you spread the frosting over it?? Hope you enjoy
