Cheese and Herb Biscuits
Ingredients
- 2 large eggs
- 1/2 cup liquid cream
- 2.5 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped parsley
- 1 tablespoon chopped dill
- 1 tablespoon chopped green basil
- 1 cup shredded cheddar cheese
- 2/3 cup butter, chilled
Topping
- 2 tablespoons toasted sesame seeds
- 2 tablespoons parmesan cheese
Preparation
Place the rack in the center of the oven and preheat to 220°C.
Prepare rimmed baking sheets.
In a deep bowl, combine cream and eggs and whisk until well blended.
In another deep bowl, mix flour, baking powder, salt, pepper, parsley, dill, basil, and cheese with a fork.
Cut butter into small cubes and add to the flour mixture. Use a pastry blender to cut in until crumbly.
Add the cream and egg mixture to the dry ingredients and stir with a wide plastic spoon until a cohesive dough forms. Do not overmix.
On a clean surface, knead the dough lightly a few times and shape into two 8-inch disks. Place on the baking sheets.
Cut each disk into 8 triangles and separate slightly. Sprinkle with parmesan cheese and sesame seeds.
Bake for 15 minutes until lightly golden. Serve warm or cold.
