Egg and Cheese Saj Sandwich

Ingredients

  • 2 tablespoons butter
  • 1/2 cup chopped pastrami
  • 3 large eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons milk
  • 1/2 cup shredded cheddar cheese
  • 1 green onion, chopped
  • 1/2 medium tomato, sliced
  • 4 slices pickled green pepper
  • 1 saj bread loaf

Preparation

  1. Place the saj bread on a wide plate and set it aside.

  2. Melt one tablespoon of butter in a wide skillet over medium heat. Add the chopped pastrami and stir for a few seconds to toast. Place the pastrami on the saj bread.

  3. In a deep bowl, combine the eggs, salt, and pepper. Whisk until fully mixed.

  4. Add the remaining butter to the skillet and pour in the egg mixture. Stir with a wide plastic spoon for one minute. Spread the eggs over the pastrami.

  5. Reduce the heat to low.

  6. Sprinkle the cheese, green onion, tomato slices, and pickled green pepper over the eggs and pastrami. Gently roll the saj bread around the fillings and place it back in the skillet. Press down with a heavy metal object or wide spoon to toast the bread, melt the cheese, and secure the filling. Slowly flip the roll to the other side and press until golden and toasted.

  7. Cut the roll into four pieces and serve immediately with olives and pickles.
