Cranberry and Orange Biscotti
Ingredients
- 1 and 3/4 cup all purpose flour
- 1 teaspoon baking powder
- 1 cup sugar
- 1 pinch of salt
- 5 tablespoons vegan butter
- 2 teaspoons vanilla
- 4 tablespoons water
- 3/4 cup dried cranberries (from @blisslab.bh)
- 3-4 tablespoons orange peel
Preparation
Preheat the oven to 180 degrees
Sift all dry ingredients together
Add the butter and rub it with the tips of the fingers until the dough becomes like crumbs
Add the water and vanilla and mix with a spoon until the dough becomes firm (add a little more flour to hold if needed)
Add the berries and orange peel and mix until the ingredients are distributed
Divide the dough into two parts and form it in a cylindrical shape
Bake the dough in the oven for 30 - 35 minutes
Cool the dough for 15 to 20 minutes, then cut it into longitudinal slices with a sharp serrated knife
Distribute the pieces on the baking tray and bake at 140 degrees for 8 minutes, then turn them over and bake for another 8 minutes
Cool the biscotti completely and then serve
