Delicious Blueberry Chocolate Chip Bars

Ingredients

  • 1 cup gluten-free 1:1 baking flour or all-purpose flour
  • 1/2 cup coconut sugar or regular sugar
  • 1/2 tsp. baking powder
  • 1/2 cup almond milk
  • 1/4 cup oil (used olive oil)
  • 1 egg
  • 1/2 cup blueberries (used frozen wild blueberries)
  • 1/4 cup dark chocolate chips

Preparation

  1. Preheat oven to 350F and spray or line an 8x8 baking dish.

  2. In a large bowl, whisk together the flour, sugar, and baking powder.

  3. In a small bowl, whisk together the almond milk, oil, and egg.

  4. Pour the wet ingredients into the dry ingredients and stir until well combined; then fold in the blueberries and chocolate chips.

  5. Pour the batter into the baking dish and bake for 23 minutes.

  6. After cooling, top with a blueberry glaze made from yogurt and mashed blueberries.

  7. Store in the fridge for the best texture.
