Delicious Blueberry Chocolate Chip Bars
Ingredients
- 1 cup gluten-free 1:1 baking flour or all-purpose flour
- 1/2 cup coconut sugar or regular sugar
- 1/2 tsp. baking powder
- 1/2 cup almond milk
- 1/4 cup oil (used olive oil)
- 1 egg
- 1/2 cup blueberries (used frozen wild blueberries)
- 1/4 cup dark chocolate chips
Preparation
Preheat oven to 350F and spray or line an 8x8 baking dish.
In a large bowl, whisk together the flour, sugar, and baking powder.
In a small bowl, whisk together the almond milk, oil, and egg.
Pour the wet ingredients into the dry ingredients and stir until well combined; then fold in the blueberries and chocolate chips.
Pour the batter into the baking dish and bake for 23 minutes.
After cooling, top with a blueberry glaze made from yogurt and mashed blueberries.
Store in the fridge for the best texture.
