Blueberry Bars with Yogurt Topping

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 egg
  • 1/2 cup blueberries

Preparation

  1. Preheat oven to 350°F and spray or line an 8x8 baking dish.

  2. In a large bowl, whisk together the flour, sugar, and baking powder, then carefully stir in the blueberries.

  3. In a small bowl, whisk together the milk, oil, and egg.

  4. Pour the wet ingredients into the dry ingredients and stir until well combined.

  5. Pour the batter into the prepared 8x8 baking dish and bake for 23 minutes.

Serving suggestions

  1. Once cooled, flip onto a cutting board to cut slices and top with yogurt and blueberry juice.
