Festive Carrot Date Walnut Cake

Ingredients

  • 250g grated carrots
  • 250g Kimia dates
  • 250g jaggery powder
  • 100g walnuts
  • 4 eggs
  • 250ml olive oil
  • 250g almond flour
  • 1.5 tsp baking powder
  • 2 tsp garam masala

Preparation

  1. In a mixing bowl, mix together the finely grated carrots, finely chopped dates, jaggery, and finely chopped walnuts.

  2. Mix in the 4 eggs and the olive oil, and blend well.

  3. In a separate bowl, mix together the almond flour, baking powder, and garam masala.

  4. Fold this mixture into the cake batter.

  5. Bake in a preheated oven at 180°C for 45 minutes.

  6. Allow the cake to cool for 24 hours, then demould and slice.

  7. Serve at room temperature or slightly warm with a scoop of vanilla ice cream.
