Festive Carrot Date Walnut Cake
Ingredients
- 250g grated carrots
- 250g Kimia dates
- 250g jaggery powder
- 100g walnuts
- 4 eggs
- 250ml olive oil
- 250g almond flour
- 1.5 tsp baking powder
- 2 tsp garam masala
Preparation
In a mixing bowl, mix together the finely grated carrots, finely chopped dates, jaggery, and finely chopped walnuts.
Mix in the 4 eggs and the olive oil, and blend well.
In a separate bowl, mix together the almond flour, baking powder, and garam masala.
Fold this mixture into the cake batter.
Bake in a preheated oven at 180°C for 45 minutes.
Allow the cake to cool for 24 hours, then demould and slice.
Serve at room temperature or slightly warm with a scoop of vanilla ice cream.
