Carrot Walnut Coated Cake
Ingredients
- 4 eggs
- 1 cup granulated sugar
- 1 cup finely ground walnuts
- 2 finely grated carrots
- 1 teaspoon cinnamon
- 1 cup milk
- 1 cup vegetable oil
- 1 packet vanilla
- 1 packet baking powder
- 2.5 cups flour
Coating
- 1 cup finely ground walnuts
- 1 tablespoon butter
Preparation
Prepare the cake mold by greasing it with butter and sprinkling ground walnuts all over, then place it in the refrigerator.
Beat eggs and sugar for at least five minutes until creamy.
Add milk and vegetable oil in sequence and beat a little more.
Sift the dry ingredients and add them gradually while beating with a wire whisk.
Add cinnamon, grated carrot, and ground walnuts, and mix gently.
Remove the mold from the refrigerator, pour in the batter, and tap it a couple of times on the counter to remove air bubbles.
Bake in a preheated 180-degree Celsius oven until a toothpick inserted comes out clean.
Remove from the oven, allow to cool slightly, then invert onto a serving plate.
