Carrot Walnut Cinnamon Cake

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 200 ml cream
  • 2 cups flour
  • 1 packet baking powder
  • 1 packet vanilla
  • 1 cup ground walnuts
  • 1 cup grated carrot
  • 1.5 teaspoons cinnamon
  • 1 tablespoon lemon juice

Preparation

  1. Beat eggs and sugar in a mixing bowl with a mixer until foamy.

  2. Add cream and vegetable oil and mix.

  3. Sift in flour, baking powder, and vanilla.

  4. Peel the carrot, grate it finely, squeeze out its juice, then add the carrot, ground walnuts, cinnamon, and lemon juice, and mix well.

  5. Pour the mixture into a mold greased with butter and bake in a preheated oven at 170 degrees Celsius on top-bottom setting for 40 minutes.
