Ever-Rising Moist Cotton Cake

Ingredients

  • 4 eggs
  • 1.5 cups granulated sugar
  • 1 cup vegetable oil
  • 1 cup warm water
  • 1 cup starch
  • 2 cups flour
  • 1 packet baking powder
  • 1 packet vanilla

Cocoa mixture

  • 2.5 tablespoons cocoa
  • 2.5 tablespoons water

Preparation

  1. Beat eggs and sugar with a mixer until fluffy and foamy, reaching a creamy consistency.

  2. Add vegetable oil and warm water, then mix again.

  3. Sift flour, starch, baking powder, and vanilla over the liquid mixture.

  4. Stir the mixture with a spatula without using a mixer.

  5. Optionally, add orange or lemon zest.

  6. Grease the cake mold.

  7. Pour more than half of the batter into the mold.

  8. Add cocoa and water to the remaining batter and mix.

  9. Pour the cocoa batter into the mold, optionally swirling with a knife or leaving as is.

  10. Preheat the oven to 180 degrees Celsius and bake the cake.

  11. Do not open the oven door for the first 20 minutes to prevent the cake from deflating.

  12. Bake until a toothpick inserted comes out clean.

  13. Allow the cake to cool slightly, then invert from the mold, slice, and serve.
