Healthy Pumpkin Oatmeal Cookies for Breakfast
Ingredients
- 1 1/2 cup oats
- 3/4 cup pumpkin
- 2-3 tbs maple syrup
- 3 tbs sunflower seed butter (or any nut butter)
- 1 tbs chia seeds
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla
- Toppings: cranberries, pumpkin seeds, sunflower seeds, hemp seeds (optional)
Preparation
Preheat your oven to 350°F
Add all the wet ingredients together in a bowl and mix.
Add the rest of the ingredients into the bowl and mix again.
Scoop about 2-3 tbs of batter and roll it into a ball. Flatten gently with the palm of your hand and place on a baking sheet lined with a silicone baking mat.
Bake for about 13-15 minutes.
Allow the cookies to cool for 5 minutes before transferring to a cooking rack.
Top with your favorite toppings (if using) and enjoy
