Healthy Pumpkin Oatmeal Cookies for Breakfast

Ingredients

  • 1 1/2 cup oats
  • 3/4 cup pumpkin
  • 2-3 tbs maple syrup
  • 3 tbs sunflower seed butter (or any nut butter)
  • 1 tbs chia seeds
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla
  • Toppings: cranberries, pumpkin seeds, sunflower seeds, hemp seeds (optional)

Preparation

  1. Preheat your oven to 350°F

  2. Add all the wet ingredients together in a bowl and mix.

  3. Add the rest of the ingredients into the bowl and mix again.

  4. Scoop about 2-3 tbs of batter and roll it into a ball. Flatten gently with the palm of your hand and place on a baking sheet lined with a silicone baking mat.

  5. Bake for about 13-15 minutes.

  6. Allow the cookies to cool for 5 minutes before transferring to a cooking rack.

  7. Top with your favorite toppings (if using) and enjoy
