Healthy Vegan Peanut Butter Lava Cakes

Ingredients

Dry

  • 1/2 cup ground oats (50 g)
  • 3 tbsp sugar or coconut sugar (35 g)
  • 2 1/2 tbsp cocoa powder (15 g)
  • 1/2 tsp baking powder
  • A pinch of salt

Wet

  • 1/2 small banana (40 g)
  • 1 1/2 tbsp peanut butter, melted (25 g)
  • 1/3 cup plant-based milk (I used 80 g canned coconut milk)
  • 1/4 tbsp apple cider vinegar
  • 1/2 tsp vanilla extract

Filling

  • 1 heaped tsp peanut butter
  • 1 piece of vegan chocolate

Preparation

  1. Preheat the oven to 360 F (180 C) and grease 2 small ramekins with oil.

  2. Mix the dry ingredients in a bowl.

  3. Mash the banana with a fork in another bowl. Melt the peanut butter in a double boiler and add it to the banana.

  4. Add the milk, apple cider vinegar, and vanilla. Mix well.

  5. Add the wet ingredients to the dry ingredients and mix.

  6. Pour some batter into each ramekin halfway. Add a heaping teaspoon of peanut butter and a piece of chocolate on top, then cover with more batter.

  7. Bake for approximately 18 minutes. Enjoy immediately.
