Moist Brazilian Coconut Cake
Ingredients
- 6 eggs
- 360 g sugar (about 2 cups)
- 420 g flour (about 3 cups)
- 1 tablespoon (or 18 g) baking powder
- 1 cup (240 ml) orange juice
Syrup
- 400 ml milk (or as needed)
- 400 g sweetened condensed milk (about 1 1/2 cups, or one can)
- 400 ml coconut milk
- Shredded coconut as needed to cover the entire cake
Preparation
Beat egg whites until stiff, add egg yolks one by one while beating, then add sugar and baking powder
Add flour and orange juice alternately, mixing with a spatula
Bake in the oven at 180Β°C for 30 minutes
After removing from the oven, pour the syrup over the cake to make it moist and cover the entire surface with shredded coconut
