Paleo Gluten-Free Cake Batter Cookies

Ingredients

  • 1 egg
  • 1 cup cashew butter
  • 1/2 cup coconut sugar
  • 2 tbsp vanilla protein
  • 1 tsp cinnamon
  • 2 tbsp sprinkles

Icing

  • 1 cup Greek yogurt
  • 1 tbsp honey
  • sprinkles

Preparation

  1. Preheat oven to 350F

  2. Mix all ingredients together except sprinkles

  3. Add sprinkles once the batter is blended

  4. Form cookies on parchment paper

  5. Bake for 10 minutes

  6. Let cool before adding icing

  7. Mix icing by combining 1 cup Greek yogurt with 1 tbsp honey and add sprinkles

  8. Apply icing to the cooled cookies
