Royal Kunafa with Fruits

Ingredients

  • 500 grams kunafa
  • 1 cup powdered sugar
  • 1 cup melted ghee
  • 2 cups kaymak

Nut and fruit mixture

  • 1/2 cup walnuts
  • 1/2 cup pistachios
  • 1/2 cup hazelnuts
  • 1/2 cup raisins
  • 1/2 cup chopped apricots
  • 1/2 cup chopped dates
  • 1/2 cup candied cherries
  • 4 chopped strawberries
  • 2 chopped kiwis

Preparation

  1. Remove the frozen kunafa packet from the freezer and let it thaw on the kitchen counter until it is free of ice and becomes soft.

  2. Position the wire rack in the middle of the oven and preheat the oven to 180°C.

  3. Prepare a shallow baking tray.

  4. In a deep bowl, place the kunafa then sprinkle the sugar and ghee over it. Rub the kunafa with your fingertips until it is fully absorbed with the ghee. Do not break the kunafa strands while rubbing.

  5. Place the kunafa in the oven for 15 to 20 minutes until it browns. Using a wooden spoon, stir the kunafa several times during browning. Remove the kunafa from the oven and let it cool completely.

  6. Prepare a 9 or 10-inch mold and line it with plastic wrap.

  7. In the bottom of the mold, spread half of the walnuts, pistachios, hazelnuts, raisins, apricots, dates, cherries, strawberries, and kiwis. Spread half of the kunafa and press firmly to compact with the fruits. Spread the kaymak over the kunafa layer to cover it completely. Spread the remaining fruit mixture. Spread the remaining kunafa and press lightly to hold the layers together.

  8. Place the mold in the refrigerator for several hours.

  9. Invert the royal kunafa with fruits onto a serving plate, garnish with pistachios, and serve immediately.
