Soft Pillowy Chocolate Paleo Cookies

Ingredients

  • 1/4 cup tahini
  • 2 tbsp @eatnuttzo chocolate Paleo nut butter
  • 1/4 cup almond milk
  • 2 tbsp coconut cream
  • Dash of Vanilla
  • 1 flax egg
  • 2 tbsp pumpkin protein or protein of choice
  • 1/4 cup almond or @bobsredmill Paleo flour
  • 1 tbsp cacao powder
  • 1-2 drops pure monk fruit or 1-2 tbsp maple syrup
  • Dash Baking soda
  • 2 oz extra dark Chocolate chunks
  • Optional: maca or other adaptogens

Preparation

  1. Mix all the wet ingredients in a food processor until creamy.

  2. Transfer the mixture to a large mixing bowl and add the dry ingredients.

  3. Blend everything to form a dough.

  4. Spoon the dough onto a lined baking sheet.

  5. Bake at 350 degrees Fahrenheit for 12 minutes or until browned on the edges and soft on the inside.
