Homemade Protein Plant-Based Waffles

Ingredients

  • 1 flax egg (1 tbsp flax meal + 2 tbsp water)
  • 1/2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp almond milk
  • 1 tbsp apple sauce
  • 1/4 cup cassava flour
  • 1 tbsp arrowroot flour
  • 1 serving plant protein
  • 1 tsp baking soda
  • sprinkle of sea salt
  • water as needed

Toppings

  • Nancy's oatmilk vegan probiotics yogurt
  • farmers market berries
  • sprinkle of cacao nibs
  • coconut
  • drizzle of maple syrup

Preparation

  1. Mix all wet ingredients except for water in a medium bowl.

  2. Add the flours, protein powder, baking soda, and sea salt.

  3. Slowly add small increments of water, starting with 2 tablespoons, until the batter is thick but creamy and spoonable.

  4. Spray a small waffle iron with coconut or avocado oil.

  5. Pour half of the batter into the waffle iron.

  6. Cook until the waffle maker turns off.

  7. Repeat for the second waffle.
