Homemade Protein Plant-Based Waffles
Ingredients
- 1 flax egg (1 tbsp flax meal + 2 tbsp water)
- 1/2 tbsp coconut oil
- 1 tsp vanilla extract
- 2 tbsp almond milk
- 1 tbsp apple sauce
- 1/4 cup cassava flour
- 1 tbsp arrowroot flour
- 1 serving plant protein
- 1 tsp baking soda
- sprinkle of sea salt
- water as needed
Toppings
- Nancy's oatmilk vegan probiotics yogurt
- farmers market berries
- sprinkle of cacao nibs
- coconut
- drizzle of maple syrup
Preparation
Mix all wet ingredients except for water in a medium bowl.
Add the flours, protein powder, baking soda, and sea salt.
Slowly add small increments of water, starting with 2 tablespoons, until the batter is thick but creamy and spoonable.
Spray a small waffle iron with coconut or avocado oil.
Pour half of the batter into the waffle iron.
Cook until the waffle maker turns off.
Repeat for the second waffle.
