Vegan Banana Bread with Cardamom

Ingredients

  • 3 ripe bananas
  • 1/2 cup almond flour
  • 1 cup millet flour
  • 1/2 cup rolled oats
  • 1/4 cup spelt flour
  • 1 heaped tablespoon almond butter
  • 2 tablespoons almond oil
  • 1.5 chia or flax eggs
  • 1/2 teaspoon baking soda
  • 1 teaspoon lemon juice
  • 1 teaspoon cardamom
  • 1 teaspoon vanilla powder

Preparation

  1. Mash bananas with a fork, add almond butter and oil, flax eggs, baking soda and lemon juice.

  2. Fold flours and oats in, then add cardamom and vanilla.

  3. Mix all ingredients well.

  4. Line your bread pan with a baking sheet and transfer the batter into it.

  5. Preheat oven to 350°F (175°C).

  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.

  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
