Vegan Banana Muffins with Walnuts and Chocolate Chips

Ingredients

  • 2 ripe bananas
  • 1 flax egg (1 tbsp of grounded flax seeds + 3 tbsp of water mixed together)
  • 1 dl brown sugar
  • 0.5 dl rapeseed oil
  • 1 dl oatmilk
  • 1 dl crushed walnuts
  • 1 dl dark chocolate chocolate chips
  • 3 dl flour
  • 1 tsp vanilla powder
  • 1 tsp bicarbonate
  • Pinch of salt

Preparation

  1. Prepare the flax egg and set aside.

  2. Meanwhile, mash the bananas thoroughly and add to a bowl.

  3. Also add the brown sugar, the liquids and the flax egg and whisk everything together.

  4. Combine all the dry ingredients and pour into the bowl as well.

  5. Chop the walnuts into small pieces and add them along with the chocolate chips.

  6. Stir all the ingredients together until you have a smooth batter.

  7. Pour the batter into 6 large forms and bake in the oven at 200 degrees for 20-22 minutes.

Notes

  1. This recipe makes 6 large muffins.
