Vegan Black Bean Raspberry Brownies
Ingredients
- 1/2 can black beans
- 1/2 cup plant milk
- 8 large medjool dates
- 1/4 cup applesauce
- 2 heaped tablespoons nut butter
- 1/4 cup buckwheat flour
- 1/3 cup cocoa powder
- 1/4 teaspoon baking soda
- 1/4 cup fresh or frozen raspberries
Preparation
Preheat your oven to 180 degrees Celsius and grease and line a small loaf tin.
Blend together the black beans, plant milk, medjool dates (soaked in hot water and mashed), applesauce, nut butter, buckwheat flour, cocoa powder, and baking soda.
Stir through 1/4 cup fresh or frozen raspberries.
Bake for about 25 minutes until the top is set or a toothpick inserted emerges only slightly damp.
Let cool completely on a wire rack before enjoying, or chill for an hour before serving for the best results.
