Vegan Black Bean Raspberry Brownies

Ingredients

  • 1/2 can black beans
  • 1/2 cup plant milk
  • 8 large medjool dates
  • 1/4 cup applesauce
  • 2 heaped tablespoons nut butter
  • 1/4 cup buckwheat flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 cup fresh or frozen raspberries

Preparation

  1. Preheat your oven to 180 degrees Celsius and grease and line a small loaf tin.

  2. Blend together the black beans, plant milk, medjool dates (soaked in hot water and mashed), applesauce, nut butter, buckwheat flour, cocoa powder, and baking soda.

  3. Stir through 1/4 cup fresh or frozen raspberries.

  4. Bake for about 25 minutes until the top is set or a toothpick inserted emerges only slightly damp.

  5. Let cool completely on a wire rack before enjoying, or chill for an hour before serving for the best results.
