Vegan Chocolate Digestive Cookies
Ingredients

- 110g ground oats
- 1/4 tsp salt
- 1/2 tsp baking powder
- 2 tbsp maple syrup
- 2 tbsp coconut oil, melted
Topping
- 120g vegan dark chocolate, melted
- 60g flaked almonds (optional)
Preparation
Mix the ground oats, salt, and baking powder in a bowl.
Stir in the melted coconut oil and maple syrup to form a dough.
Roll out the dough and cut into cookie shapes.
Bake the cookies until golden and crisp.
Allow the cookies to cool.
Melt the vegan dark chocolate.
Dip the cooled cookies into the melted chocolate.
Optionally sprinkle with flaked almonds.
Let the chocolate set before serving.
