Vegan Rainbow Cookie Sandwiches
Ingredients
- 3/4 cup vegan butter
- 3/4 cup brown sugar (packed)
- 3/4 cup cane sugar
- 1 tsp vanilla
- 1 tbsp plant milk of choice
- 1 tsp baking soda
- 1/4 tsp baking powder
- Dash of salt
- 1 1/3 cups flour of choice
- Chocolate chips
- Vegan Ice-Cream
- Vegan Sprinkles
Preparation
Preheat oven to 350.
In a bowl, cream together the vegan butter and sugars.
Add in the vanilla and almond milk and whip until fluffy.
Stir in the baking soda, baking powder, salt, and flour until a crumbly cookie-dough consistency forms.
Add in the chocolate chips.
Using your hands, form the mixture into balls, place onto a cookie sheet lined with parchment paper, and press down to form circular shapes about an inch in thickness.
Bake for 8-10 minutes.
Allow them to cool for 10 minutes before removing them from the cookie sheet. These cookies will look under-baked when they first come out, but that’s okay.
Assembly
Scoop ice cream between two cookies and dip sideways in the sprinkles.
