Vegan Rainbow Cookie Sandwiches

Ingredients

  • 3/4 cup vegan butter
  • 3/4 cup brown sugar (packed)
  • 3/4 cup cane sugar
  • 1 tsp vanilla
  • 1 tbsp plant milk of choice
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • Dash of salt
  • 1 1/3 cups flour of choice
  • Chocolate chips
  • Vegan Ice-Cream
  • Vegan Sprinkles

Preparation

  1. Preheat oven to 350.

  2. In a bowl, cream together the vegan butter and sugars.

  3. Add in the vanilla and almond milk and whip until fluffy.

  4. Stir in the baking soda, baking powder, salt, and flour until a crumbly cookie-dough consistency forms.

  5. Add in the chocolate chips.

  6. Using your hands, form the mixture into balls, place onto a cookie sheet lined with parchment paper, and press down to form circular shapes about an inch in thickness.

  7. Bake for 8-10 minutes.

  8. Allow them to cool for 10 minutes before removing them from the cookie sheet. These cookies will look under-baked when they first come out, but that’s okay.

Assembly

  1. Scoop ice cream between two cookies and dip sideways in the sprinkles.
