Vegan Cookie Mug Cake

Ingredients

  • 4 tbsp flour of choice (I used spelt flour)
  • 1/2 tsp baking powder
  • 1 tbsp brown sugar
  • Pinch of salt
  • 2 tbsp natural peanut butter (other nut and seed butters work)
  • 1/4 cup dairy free milk
  • 1-2 tbsp chocolate chips

Preparation

  1. Add dry ingredients except chocolate chips in a mug.

  2. Add peanut butter and milk and whisk together with a fork.

  3. Fold in chocolate chips.

  4. Place mug in the microwave for 1 minute and 30 seconds. Note that every microwave is different; if concerned, microwave for 45-50 seconds first, check doneness, and microwave for additional 10 seconds if needed.

  5. Ensure there is enough space in the mug to allow the cake to rise.

  6. For allergy-friendly versions, use dairy-free chocolate chips, your preferred dairy-free milk, alternative flours like oat or almond flour, and seed butter instead of nut butter.
