Whole Wheat Coconut Cookies

Ingredients

  • 1/2 cup salted butter (115 g)
  • 1 cup desiccated coconut
  • 1 cup whole wheat flour (144 g)
  • 1/2 cup sugar (111 g)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup milk
  • some desiccated coconut for garnishing

Preparation

  1. Preheat the oven to 180°C for 15 minutes.

  2. Add butter and sugar to a bowl and cream until the mixture becomes pale and light.

  3. Add desiccated coconut to the sugar and butter mixture.

  4. Sift flour, baking powder, and baking soda into the wet mixture.

  5. Assemble the dough without kneading, and add 2-3 tablespoons of milk to bind it together.

  6. Shape the dough into equal rounds, flatten them, dip in milk, and then coat with desiccated coconut.

  7. Bake the cookies in the preheated oven at 180°C for 12-15 minutes.

  8. Remove the baking dish and let the cookies cool slightly, then place them on a cooling rack until the center becomes crisp.

  9. Serve after half an hour for ultimate crispness.
