Gingerbread Chia Seed Pudding

Ingredients

  • 1 cup full-fat coconut milk
  • 1 cup almond milk
  • 1 tbsp molasses
  • 1 tbsp maple syrup
  • 1/2 cup chia seeds
  • 1/2 tsp ginger
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1 tsp vanilla
  • pinch of salt

Preparation

  1. Combine all ingredients in a blender.

  2. Blend briefly on low to combine.

  3. Pulse every 2-3 minutes until the chia seeds remain suspended.

  4. Transfer to a jar and refrigerate for 1-2 hours before eating.
