Homemade Extra Creamy Hummus
Ingredients
- 2 cans organic chickpeas
- 1 cup good quality tahini
- Juice of 1 large lemon
- Reserved chickpea liquid from can
- 3-4 cloves garlic
- 1-2 teaspoons salt
- 1 teaspoon pepper
Garnishes
- Purple onions
- Chickpeas for roasting
- Cherry tomatoes
- Parsley
- Lemon wedges
- Crushed red pepper
Preparation
Drain one can of chickpeas and reserve the liquid from the second can.
Blend all ingredients in a Vitamix until smooth and creamy.
Plate the hummus in a shallow bowl.
Decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper.
Serve with warm pita bread.
