Zucchini Noodles with Spinach Dressing

Ingredients

  • 1 whole zucchini

Spinach dressing

  • A handful of spinach
  • 1 dl cashews
  • 1 tbsp lemon juice
  • 1 dl water
  • 1 tbsp nutritional yeast
  • 1 date
  • Salt and pepper

Preparation

  1. Spiralize the zucchini into noodles and add to a bowl.

  2. For the dressing, soak the cashews and date in hot water for 10 minutes.

  3. Add the soaked cashews and date along with spinach, lemon juice, water, nutritional yeast, and salt and pepper to a blender and mix until creamy.

  4. Mix a few tablespoons of the dressing into the zucchini noodles.

  5. Top with extra salt and pepper and serve.

Tips

  1. Use a high-speed blender like a Nutribullet for a creamy texture.
