Creamy Kale Salad with Cashew Sauce

Ingredients

  • kale
  • spinach
  • orange
  • strawberries
  • spring onion
  • avocado
  • cucumber
  • vegan feta cheese

Cashew sauce

  • 0.5 dl cashews
  • 1 date
  • 1 small clove of garlic
  • 1 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • salt and pepper

Preparation

  1. Soak the cashews and the date in some hot water for 10 minutes.

  2. Add all the ingredients to a blender and mix until you have a smooth creamy sauce.

  3. Massage the sauce into your leafy greens.

  4. Add the rest of your ingredients on top and enjoy.
