Creamy Kale Salad with Cashew Sauce
Ingredients
- kale
- spinach
- orange
- strawberries
- spring onion
- avocado
- cucumber
- vegan feta cheese
Cashew sauce
- 0.5 dl cashews
- 1 date
- 1 small clove of garlic
- 1 tbsp nutritional yeast
- 1 tbsp lemon juice
- salt and pepper
Preparation
Soak the cashews and the date in some hot water for 10 minutes.
Add all the ingredients to a blender and mix until you have a smooth creamy sauce.
Massage the sauce into your leafy greens.
Add the rest of your ingredients on top and enjoy.
