Banana Chickpea Blondies
Ingredients
- 1 can chickpeas
- 1 small ripe banana
- 1/2 c oat flour
- 1tsp baking powder
- 1/3 c peanut butter
- 1/4 c maple syrup
- 1/4 c coconut sugar
- 1/2 c oatmilk
- 2 chia eggs
- 1/2tsp cinnamon
- 1/2tsp cardamom
- 1tsp cacao powder (for decoration)
Preparation
Preheat oven to 180/350
Drain and rinse chickpeas, add all ingredients to a food processor and blend until smooth
Pour dough into a baking pan covered with parchment paper (save 4tbsp dough, mix with cacao powder, pour on top and make swirls with a spoon for decotarional look)
Bake for 35 minutes and let cool
