Banana Chickpea Blondies

Ingredients

  • 1 can chickpeas
  • 1 small ripe banana
  • 1/2 c oat flour
  • 1tsp baking powder
  • 1/3 c peanut butter
  • 1/4 c maple syrup
  • 1/4 c coconut sugar
  • 1/2 c oatmilk
  • 2 chia eggs
  • 1/2tsp cinnamon
  • 1/2tsp cardamom
  • 1tsp cacao powder (for decoration)

Preparation

  1. Preheat oven to 180/350

  2. Drain and rinse chickpeas, add all ingredients to a food processor and blend until smooth

  3. Pour dough into a baking pan covered with parchment paper (save 4tbsp dough, mix with cacao powder, pour on top and make swirls with a spoon for decotarional look)

  4. Bake for 35 minutes and let cool
