Creamy Hummus with Decorated Veggies

Ingredients

  • 2 cans of organic chickpeas
  • 1 cup tahini
  • Juice from one large lemon
  • Chickpea juice from the can
  • 3-4 cloves of garlic
  • 1-2 teaspoons salt
  • 1 teaspoon pepper

Garnishes

  • chopped purple onions
  • roasted chickpeas
  • cherry tomatoes
  • parsley
  • lemon wedges
  • crushed red pepper

Preparation

  1. Drain one can of chickpeas and reserve the liquid from the second can.

  2. Blend all ingredients until smooth and creamy.

  3. Place the hummus in a shallow bowl.

  4. Decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper.

  5. Serve with warm pita bread.
