Easy Homemade Strawberry Jam
Ingredients
- 1 kg ripe organic strawberries
- 500 g organic unrefined sugar
- 8-10 g pectin
- Juice of 1 lemon
Preparation
The day before, mix the strawberries with three-quarters of the sugar to concentrate the fruit flavor
The next day, start cooking the mixture on low heat
When the mixture is warm, add the remaining quarter of the sugar that has been mixed with the pectin
Cook everything for 15 to 20 minutes at a gentle boil, around 102°C, and remove any foam that forms on the surface
At the end of cooking, add the lemon juice
Using a ladle, fill glass jars with the jam while keeping it on low heat for proper sterilization, then seal with lids
Invert the jars and allow them to cool
Tips
Buy and freeze organic strawberries when they are in season or damaged, and make the jam when you have about 5-6 kg
Store the sealed jars in a cool, dark place
Once opened, refrigerate the jam because it is less sweet and has a reduced shelf life
Use the jam on toast or yogurt, and note that it is better than store-bought versions
