Easy Vegan Curry Chickpea Sandwich

Ingredients

  • 1 red onion, chopped
  • 2 garlic cloves, chopped
  • 1 can (220g) chickpeas
  • 1/4 cup (60g) tahini
  • 1 tablespoon sriracha
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • salt to taste
  • 1/2 lemon
  • 1 tablespoon agave syrup or maple syrup
  • parsley or cilantro (optional)

Preparation

  1. Slightly mash the chickpeas.

  2. Mix all ingredients together to combine.

  3. Build the sandwich with your choice of bread and toppings.
