Edamame Pesto with Tagliatelle Pasta

Ingredients

  • 2 dl edamame
  • 1 handful of spinach
  • 2 dl basil
  • 1 dl sunflower seeds
  • 0.5 dl nutritional yeast
  • 0.5 dl olive oil
  • 1 tsp salt
  • 1 tsp pepper

Preparation

  1. Cook the edamame beans.

  2. Add all of the ingredients into a food processor.

  3. Blend until smooth.

  4. Add to pasta.

  5. Top with cherry tomatoes and vegan parmesan for extra flavor.

  6. Note: Requires a food processor and is high in protein, iron, and vitamins.
