Edamame Pesto with Tagliatelle Pasta
Ingredients
- 2 dl edamame
- 1 handful of spinach
- 2 dl basil
- 1 dl sunflower seeds
- 0.5 dl nutritional yeast
- 0.5 dl olive oil
- 1 tsp salt
- 1 tsp pepper
Preparation
Cook the edamame beans.
Add all of the ingredients into a food processor.
Blend until smooth.
Add to pasta.
Top with cherry tomatoes and vegan parmesan for extra flavor.
Note: Requires a food processor and is high in protein, iron, and vitamins.
