Greek Potato Green Bean Feta Salad

Ingredients

  • 500g peeled potatoes, cut into bite sized pieces
  • 200g green beans
  • 125g feta, cubed
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar (sub apple cider vinegar)
  • 1 tbsp lemon juice
  • 1 tsp finely grated garlic
  • 1 tbsp dried oregano
  • 1-2 handfuls black olives
  • Salt & black pepper

Preparation

  1. If using brined olives, wash and soak them in some cold water while you continue preparing the rest of the salad.

  2. Put the olive oil, dried oregano, vinegar, lemon juice, garlic and feta chunks into a mixing bowl with a pinch of salt and pepper and combine. Set aside for the flavour to develop.

  3. Simmer the potatoes in salted water until soft, drain and either plunge into ice water or run under the cold tap to cool them down to prevent further cooking. Simmer the green beans in salted water for a couple of minutes and then cool the same way as the potatoes. Drain and set aside.

  4. Drain the olives and add them plus the potatoes and beans to the mixing bowl, gently stir and turn everything over in the bowl until all the potatoes and beans are coated with the dressing. Season to taste.
