Beef Kofta and Greek Salad

Ingredients

  • 3 medium sized ripe tomatoes quartered
  • 1/2 cucumber thick half moon slices
  • 1 small red onion finely sliced
  • 100g feta chunks
  • 1/2 green bell pepper sliced (ok to sub other colour)
  • 2 tsp red wine vinegar (sub apple cider vinegar or white wine vinegar)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • handful black olives

Preparation

  1. Soak wooden skewers in water

  2. Blend the parsley, onion, garlic and lemon juice in a food processor or juicer then add to all the other ingredient in a mixing bowl

  3. Knead the mixture until thoroughly combined and smooth

  4. Divide the mixture into 6 and shape with your hands then pop them back in the fridge for 15 mins before skewering

  5. Grill for 4-5 mins each side, turning over when browned

  6. Greek salad

  7. Put everything is a mixing or salad bowl and leave it to sit for 30 mins stirring several time before serving to allow the flavour to develop
