Beef Kofta and Greek Salad
Ingredients
- 3 medium sized ripe tomatoes quartered
- 1/2 cucumber thick half moon slices
- 1 small red onion finely sliced
- 100g feta chunks
- 1/2 green bell pepper sliced (ok to sub other colour)
- 2 tsp red wine vinegar (sub apple cider vinegar or white wine vinegar)
- 2 tbsp olive oil
- 1 tsp dried oregano
- handful black olives
Preparation
Soak wooden skewers in water
Blend the parsley, onion, garlic and lemon juice in a food processor or juicer then add to all the other ingredient in a mixing bowl
Knead the mixture until thoroughly combined and smooth
Divide the mixture into 6 and shape with your hands then pop them back in the fridge for 15 mins before skewering
Grill for 4-5 mins each side, turning over when browned
Greek salad
Put everything is a mixing or salad bowl and leave it to sit for 30 mins stirring several time before serving to allow the flavour to develop
