Indonesian Stir-Fried Banana Heart

Ingredients

  • 1 banana heart
  • Fried anchovies as needed
  • 3 bay leaves
  • 1 thumb-sized galangal
  • 1 stalk lemongrass
  • Sugar to taste
  • Salt to taste
  • Stock powder to taste
  • 100 ml water

Sliced spices

  • 4 shallots
  • 3 garlic cloves
  • 5 bird's eye chilies
  • 10 large green chilies
  • 3 large red chilies

Preparation

  1. Peel the outer skin of the banana heart, cut into pieces, wash, then boil for 5-10 minutes

  2. Sauté shallots and garlic, bay leaves, galangal, and lemongrass until fragrant

  3. Add chilies and anchovies, stir and wait until chilies are slightly wilted

  4. Add banana heart, sugar, salt, stock powder, and water

  5. Stir until well mixed, adjust seasoning

  6. Let the spices infuse for about 2-3 minutes

  7. Turn off the stove
