Sweet Potato Sourdough Bread with Tender Crumb

Ingredients

  • 100 g leaven (42g 100% starter + 25g whole wheat flour + 75g bread flour + 85g water)
  • 112 g all-purpose flour
  • 112 g bread flour
  • 100 g boiled, mashed and cooled sweet potato
  • 50 g water from boiling the sweet potato
  • 100 g whole milk
  • 25 g vegetable oil
  • 40 g sugar
  • 5 g salt

Preparation

  1. Perform 2 proofs.

  2. Bake in loaf pans at 375°F for 35-40 minutes.
