Sweet Potato Sourdough Bread with Tender Crumb
Ingredients
- 100 g leaven (42g 100% starter + 25g whole wheat flour + 75g bread flour + 85g water)
- 112 g all-purpose flour
- 112 g bread flour
- 100 g boiled, mashed and cooled sweet potato
- 50 g water from boiling the sweet potato
- 100 g whole milk
- 25 g vegetable oil
- 40 g sugar
- 5 g salt
Preparation
Perform 2 proofs.
Bake in loaf pans at 375°F for 35-40 minutes.
