Vegan Gluten-Free Chickpea Blondies
Ingredients
- 1 can chickpeas
- 4 tablespoons nut paste (such as almond paste, peanut butter, or tahini)
- 125 grams pitted dates
- 65 grams ground almonds or almond flour
- Pinch of salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract or vanilla powder
- 1 apple
- 1 pear
- Almond shavings
Preparation
Preheat the oven to 180 degrees Celsius and line a square baking pan with parchment paper.
Place the chickpeas, dates, nut paste, almond flour, salt, cinnamon, and vanilla extract or powder in a food processor and blend until a thick, firm mixture forms. Scoop it into the baking pan and smooth it out with a spoon.
Slice the apple and pear into thin pieces and spread them over the chickpea mixture. Top with some almond shavings and then place the baking pan in the oven.
Bake the blondie for 30 minutes in the oven and then let it cool completely.
Cut into pieces and serve immediately, or store in an airtight container in the refrigerator for up to 4 days.
