Vegan Spanish Paella
Ingredients
- 1 red bell pepper
- 1 yellow bell pepper
- 2 big tomatoes
- 1 onion
- 2 garlic cloves
- 100g / 2/3 Cups peas
- 100g / 1/2 Cup Risotto Rice
- 1 tsp Saffron
- 1 tsp paprika
- salt
- pepper
- 250ml / 1 cup vegetable broth
- 1 lemon
Preparation
Saute onion and garlic in olive oil
Then add diced bell peppers and tomatoes and peas
Let cook for 10 mins
Add spices and rice
Mix everything well and add vegetable broth
Cook until rice is ready
