Paleo Waffles with Egg and Avocado

Ingredients

  • 2 eggs
  • 1/2 mashed banana
  • 2 tbsp coconut flour
  • 1/4 tsp baking powder
  • 1 tbsp cinnamon
  • 1 tsp vanilla
  • 1 tbsp unsweetened almond milk (add more if needed)
  • 1 tsp almond butter

Accompaniments

  • 1 egg (for frying)
  • 1 avocado (mashed)
  • Ghee (for frying)
  • African smoke seasoning
  • Micro greens

Preparation

  1. Mix all waffle ingredients together to form a batter

  2. Pour batter into a waffle iron and cook until golden brown to make 3 mini waffles or one large waffle

  3. Fry an egg in ghee until desired doneness

  4. Mash the avocado

  5. Assemble by topping the waffles with the fried egg, mashed avocado, African smoke seasoning, and micro greens
