Raw Rich Chocolate Truffles

Ingredients

Chocolate truffle filling

  • 3-4 small ripe Avocados
  • 1/4 tsp Sea Salt
  • 2 tbsp unsweetened Almond Milk
  • 1 tsp pure Vanilla Extract
  • 4 tbsp pure maple or rice malt syrup
  • 4-5 drops of pure stevia
  • 1/2 cup raw cacao powder

Chocolate coating

  • 1 cup coconut oil
  • 1/2 cup raw cacao powder
  • 1/2 cup pure maple or rice malt syrup

Preparation

  1. Blend or process all chocolate filling ingredients together in a high speed blender or food processor.

  2. Using your hands, form the mixture into small balls about 1 tablespoon in size and place them on a cookie sheet lined with baking paper.

  3. Transfer to the freezer until firm.

  4. While waiting for the balls to firm, make the chocolate coating by whisking all the coating ingredients in a separate bowl until a smooth consistency has been reached.

  5. Once the truffles have hardened, remove from the freezer and dip each one into the chocolate coating, then place them back on the cookie sheet; double dip if there is leftover coating.

  6. Return to the freezer until the coating has firmed, about 2 hours.

  7. Enjoy straight from the fridge or freezer.

  8. Note: limit your intake to 2 truffles, as they contain sweetener and avocado.
