Lemon Poppyseed Overnight Oats

Ingredients

  • 45 grams quick oats
  • 200 ml plant-based milk
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon poppyseeds

Toppings

  • lemon zest
  • blueberries
  • plant-based yogurt
  • cashews

Preparation

  1. Mix all ingredients except the toppings and transfer to a sealed container or jar.

  2. Refrigerate overnight.

  3. Add the toppings the next morning and serve.
