Maple Sweetened Overnight Oats with Peach Compote

Ingredients

  • 1 cup rolled oats
  • 1 cup plant-based milk
  • 1 scoop @youtheory Spore Probiotic Powder
  • 2 tbsp maple syrup
  • 2 tbsp chia seeds (optional)

Compote items

  • 2 ripe peaches, diced
  • 2 tbsp coconut sugar
  • 2 tbsp water

Preparation

  1. Mix all ingredients together.

  2. Let sit for at least 4 hours, or overnight.

  3. Serve topped with peach compote, almond butter, nuts, blueberries, etc.

Compote cooking

  1. Add all ingredients to a small saucepan and heat over medium-low.

  2. As the peaches start to soften, mash them gently with a wooden spoon.

  3. Simmer for about 10 minutes, until the mixture is thickened and the peaches are completely soft.
