Maple Sweetened Overnight Oats with Peach Compote
Ingredients
- 1 cup rolled oats
- 1 cup plant-based milk
- 1 scoop @youtheory Spore Probiotic Powder
- 2 tbsp maple syrup
- 2 tbsp chia seeds (optional)
Compote items
- 2 ripe peaches, diced
- 2 tbsp coconut sugar
- 2 tbsp water
Preparation
Mix all ingredients together.
Let sit for at least 4 hours, or overnight.
Serve topped with peach compote, almond butter, nuts, blueberries, etc.
Compote cooking
Add all ingredients to a small saucepan and heat over medium-low.
As the peaches start to soften, mash them gently with a wooden spoon.
Simmer for about 10 minutes, until the mixture is thickened and the peaches are completely soft.
