Soft and Melty Flourless Peppermint Brownies

Ingredients

  • 2 flax eggs (2 tbsp flax meal + 6 tbsp water)
  • 1 cup tahini
  • 1/3 cup maple syrup
  • 2 tbsp coconut sugar
  • 1/3 cup pumpkin purée
  • 1/3 cup cacao powder
  • 1-2 drops pure peppermint extract
  • Dash of cinnamon
  • Pinch of baking soda
  • Handful of dark chocolate

Optional icing

  • 1 tbsp coconut butter
  • 1 tbsp maple syrup
  • 1 tbsp chocolate chips

Preparation

  1. Preheat oven to 350 degrees. Mix flax egg, pumpkin, tahini, maple in a large bowl.

  2. Add cacao and stir well, until creamy.

  3. Add chocolate chips, peppermint, baking soda cinnamon and stir.

  4. Pour into a oiled or parchment paper lined baking dish (8x8 or rectangle dish). Optional, sprinkle with sea salt.

  5. Bake for 28-30 minutes.

Optional icing

  1. Melt all together and spoon over cooled brownies
