Soft and Melty Flourless Peppermint Brownies
Ingredients
- 2 flax eggs (2 tbsp flax meal + 6 tbsp water)
- 1 cup tahini
- 1/3 cup maple syrup
- 2 tbsp coconut sugar
- 1/3 cup pumpkin purée
- 1/3 cup cacao powder
- 1-2 drops pure peppermint extract
- Dash of cinnamon
- Pinch of baking soda
- Handful of dark chocolate
Optional icing
- 1 tbsp coconut butter
- 1 tbsp maple syrup
- 1 tbsp chocolate chips
Preparation
Preheat oven to 350 degrees. Mix flax egg, pumpkin, tahini, maple in a large bowl.
Add cacao and stir well, until creamy.
Add chocolate chips, peppermint, baking soda cinnamon and stir.
Pour into a oiled or parchment paper lined baking dish (8x8 or rectangle dish). Optional, sprinkle with sea salt.
Bake for 28-30 minutes.
Optional icing
Melt all together and spoon over cooled brownies
