Strawberries and Nice Cream Waffles
Ingredients
Vanilla nice cream
- 4 frozen bananas, peeled and chopped
- 1 teaspoon vanilla extract
- 3 tablespoons coconut milk or any dairy-free milk
Gluten-free waffles
- 1.5 cups warm water
- 2 tablespoons oil
- 3 tablespoons agave or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon apple cider vinegar
- 1/4 cup raw buckwheat
- 1 cup gluten-free rolled oats
- 1 cup chickpea or gram flour
- 2 teaspoons baking powder
Preparation
Vanilla nice cream
Add all ingredients to a blender and process until smooth and creamy. Set aside in the freezer to firm up for 30 minutes, until scoopable.
Gluten-free waffles
Add all ingredients to blender and process until really smooth and creamy. Allow to sit for 5 minutes.
Brush waffle iron with a little oil and add 3 tablespoons of batter per waffle. Cook for 4 to 5 minutes, until golden and crispy. Leftover waffles can be frozen and reheated in a toaster or under the grill for quick breakfasts.
Assembly
Top the waffles with vanilla nice cream and fresh strawberries
