Sweet Potato Icecream Anyone

Ingredients

  • 250g baked sweet potato
  • 1 frozen banana
  • 350ml coconut milk, the hard part
  • 40g cocoa powder
  • 1/4 tsp salt
  • 120g medjool dates
  • 1 tbsp vanilla extract
  • 1 tbsp cinnamon, optional

Preparation

  1. Peel and dice sweet potato

  2. Place it in a pre-heated oven and cook until tender

  3. Allow it to cool

  4. Chop your dates, get rid of the pits and soak them in a boiled water until soft

  5. Place all the ingredients in a blender, blend until completely smooth and creamy

  6. If the consistency is too thick, add some water in which the dates were soaking

  7. Add the mixture to a loaf tin with parchment paper or ice-cream container and cover with plastic wrap

  8. Leave ice-cream to freeze overnight

  9. When ready to serve, take it out of the freezer and let it sit in a room temperature for 15mins to soften before scooping
