Sweet Potato Icecream Anyone
Ingredients
- 250g baked sweet potato
- 1 frozen banana
- 350ml coconut milk, the hard part
- 40g cocoa powder
- 1/4 tsp salt
- 120g medjool dates
- 1 tbsp vanilla extract
- 1 tbsp cinnamon, optional
Preparation
Peel and dice sweet potato
Place it in a pre-heated oven and cook until tender
Allow it to cool
Chop your dates, get rid of the pits and soak them in a boiled water until soft
Place all the ingredients in a blender, blend until completely smooth and creamy
If the consistency is too thick, add some water in which the dates were soaking
Add the mixture to a loaf tin with parchment paper or ice-cream container and cover with plastic wrap
Leave ice-cream to freeze overnight
When ready to serve, take it out of the freezer and let it sit in a room temperature for 15mins to soften before scooping
